I want to make him a rubber duck cake with some kind of strawberry filling in the middle of the two pieces of cake. Can anyone give me tips on how to cut the cake without it crumbleing on me, and how to do the filling without it seeping into the cake and makeing it gooy and wet?

I would bake separate layer cakes, rather than trying to cut one. (I've found that process quite difficult, even with the floss.) You can buy a strawberry topping, and that is less slippery than just using sliced strawberries. It's very important to let it cool all the way before you assemble or frost it.

One way to decorate with the ducky theme would be to buy or make frosted duck sugar cookies. You could do one big one, followed by several little ducklings, around the side of a round cake, and maybe top it with a duck shaped candle.
